This is a great recipe and so easy to make. It makes 2 loaves. You can freeze one or give it to a friend…or eat them both…either way, you will LOVE THIS BREAD!

ZUCCHINI BREAD

3 eggs
3/4 cup cooking oil
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 teaspoons Mexican Vanilla (I carry this in my on-line boutique…you need to try this!)
2 cups raw zucchini squash, peeled and grated
3 cups all-purpose flour
3 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder

Preheat your oven to 325 degrees. Beat the eggs until they are foamy and then add your oil, sugars and vanilla…mixing well. Stir in the grated zucchini. In a large bowl, sift together the flour, cinnamon, salt, baking soda and baking powder. Slowly add the sifted dry ingredients to your egg mixture until well combined. Pour into two greased loaf pans and bake for 1 hour or until a cake tester comes out clean. Turn out onto a wire rack to cool and then keep wrapped in foil for freshness. Serve with tea or coffee or a nice cold glass of milk! YUMMY!
