There is just nothing like an afternoon tea with tiny sweets and dainty little tea sandwiches! They are easy to make and everyone will be delighted and impressed! Try these and listen to the “ooohhhhs and ahhhhhhs” that you will receive. If you won’t be serving them immediately, just remember to wrap them in a barely damp tea towel to keep them nice and moist and put them into the refrigerator until ready to serve. I have given you the product names that I like to use, but of course you can substitute your own brands without a problem. Recipes listed are for the sandwiches shown left to right.

“ORANGE BITES”

1 package (3 oz) softened cream cheese
1/3 cup Stonewall Kitchen Blood Orange Marmalade (I sell this in my on-line BOUTIQUE)
8 slices Pepperidge Farm white sandwich bread
8 slices Pepperidge Farm very thin whole wheat bread

In a small mixing bowl, combine the cream cheese and marmalade and set aside. Trim the crusts from your bread, making every slice the same size. With a tiny heart shaped cookie cutter, cut out a heart in 4 of the slices of white bread, and 4 of the slices of wheat bread. Spread each UNCUT piece of bread with a layer of the marmalade mixture and top with one of the cut-out pieces of bread of the opposite color.

“HERB TURKEY BITES”

Pepperidge Farm white sandwich bread
garlic and herb Boursin cheese
shaved roasted turkey
finely shredded Parmesan cheese

Cut the crusts from your bread and cut each slice in HALF. Spread each slice with a layer of the Boursin cheese. Layer one half with a generous amount of the shaved turkey, and the other half with the finely shredded Parmesan cheese. Place the two slices together and press gently.

“CUCUMBER BITES”

Pepperidge Farm cinnamon bread
garlic and herb Boursin cheese
cucumber, sliced into very thin round slices and then cut into half moons
paprika

Cut the crusts from your bread and cut each slice in HALF. Spread each slice with a layer of the Boursin cheese. Lay down a layer of the sliced cucumbers, overlapping the pieces to cover each slice. Dust the tops of the cucumbers with paprika. Top each cucumber section with a slice of bread that is also spread with the Boursin cheese.

Stonewall Kitchen Maple Champagne Mustard (I sell this in my on-line BOUTIQUE)
shaved maple ham

Cut the crusts from your bread and cut each slice in HALF. Spread one half of each sandwich with the Bellini Jam and the other half with the Maple Champagne Mustard. Top one of the slices with a generous amount of the shaved maple ham and top with the other half. Press together gently.

“GENTLEMEN’S BITES”

Pepperidge Farm Pumpernickel bread
Stonewall Kitchen Maple Champagne Mustard (I sell this in my on-line BOUTIQUE)
softened cream cheese
watercress, cleaned of stems
finely minced shallot
shaved roast beef
.
Cut the crusts from your bread and cut each slice in HALF. Spread one half of the bread slices with the Maple Champagne Mustard and the other half of the slices with the softened cream cheese. Top the half with the mustard with leaves of watercress, use a generous amount. Top the half with the cream cheese with your finely minced shallots…press them into the cream cheese so that they will adhere. Add a generous amount of shaved roast beef to one half and top with the other half…press together gently.
