Let’s face it…Ice Pops are good ANY time of the year, not just when it’s hot! It makes a cool, refreshing palate cleanser after a meal…or just a light little snack while watching TV. THESE little “pops” are sooooo easy to make too. Let me know how you liked them.

Raspberry-Lemon Pops

1 1/4 cup fresh or frozen lemon juice (I love the frozen minute maid lemon juice…NOT the lemonade but the REAL LEMON JUICE in a plastic bottle, found in the freezer section of your grocery)
1 (14-ounce) can sweetened condensed milk
1 1/4 cup water
3 Tablespoons prepared orange juice
1 teaspoon Mexican Vanilla (you can find this in my on-line boutique!)
1 pint fresh raspberries

15 (3-ounce) clear plastic Dixie cups
craft sticks, cut in half
3 small lemons, cut into 1/4-inch slices

In a large pitcher, mix everything together except the raspberries and sliced lemons. When it is all combined, pour the mixture into the Dixie cups, filling about 3/4-way full. Add 3-4 fresh raspberries to each cup…push them down into the mixture for better distribution. Thread a lemon slice onto each craft stick about halfway onto the stick and gently place it into your filled cups…making sure that the lemon slices are sitting on top of your mixture. Freeze overnight. The pops are fairly easy to remove from these plastic Dixie cups by just giving them a firm twist inside the cup…if necessary, run a small amount of warm water over the outside of the cup and they slip right out! Now sit down and enjoy one…or two…or three! 🙂
