These waffles will really make your morning special…and you can even make a tiny waffle for your furbabies too (pumpkin is super good for them!)

Pumpkin-Pecan Waffles with Spiced Whipped Cream
.
1 1/2 cups warm milk
2 Tablespoons sugar
4 tablespoons brown sugar
1 envelope active dry yeast
1 cup canned PURE pumpkin (NOT pumpkin pie filling)
4 Tablespoons melted butter, cooled to just warm
1 1/2 teaspoons Mexican Vanilla (I carry this in my online BOUTIQUE)
3 eggs
1/2 teaspoon salt
2 cups flour
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 cup oil
1/4 cup finely chopped pecans
butter cooking spray

In a large bowl, mix the warm milk with the sugars and the yeast. Set it aside and let it proof for about 20 minutes. When it has started to bubble and foam, stir in the pumpkin, melted butter, vanilla and eggs and mix with a hand mixer on medium. Add remaining ingredients and continue mixing until everything is well blended. Cover this mixture with plastic and let rise in a warm place for about an hour. Once the mixture has risen, you can make the waffles or put in the refrigerator overnight and make them in the morning.

Re-stir the batter and preheat your waffle iron…spray well with the butter cooking spray. Ladle on a generous amount of batter and cook until your waffles are the desired texture. Serve with Spiced Whipped Cream, powdered sugar, fruit and maple syrup!!!!

Spiced Whipped Cream
.
1 cup whipping cream
4 Tablespoons powdered sugar
1/8 teaspoon cinnamon
1/8 teaspoon ginger
.
In a large mixing bowl or mini Cuisinart, whip all ingredients until thick and fluffy…serve on top of waffles.
