This is a very easy recipe that makes a perfect side dish for meat or chicken. Pair it up with a salad and some fruit and you will have a wonderful vegetarian meal!

Orange Glazed Carrots

1 pound bag of baby carrots
1 teaspoon salt
1/3 cup orange juice
1/4 cup water
1 Tablespoon fresh lemon juice
1 Tablespoon honey
1 teaspoon cinnamon
1 teaspoon nutmeg
1 Tablespoon cornstarch mixed into 2 Tablespoons water (stir to make a paste)

In a medium size saucepan, add the salt and baby carrots and enough water to cover the carrots. Bring water to a boil and then reduce heat, simmering until the carrots are slightly soft but not mushy. Drain carrots and set aside. In a small saucepan over medium heat, add the orange juice, water, lemon juice, honey, cinnamon and nutmeg. Bring to a slow boil, then reduce heat and cook for a few extra minutes. Add the cornstarch paste to the sauce and cook over medium-low heat until thickened, then pour the sauce over the carrots and enjoy!
