This is the easiest salad to prepare because you just don’t have to be sooooo exact with the ingredients.  This recipe will make 2 salads…if you need more, just double the amounts.  It is fool-proof and makes an elegant salad.  Everyone will think you really did a LOT of work…don’t tell them how EASY it really was!  Wink wink

MEYER LEMON & DARK CHERRY VINAIGRETTE PEAR SALAD

Butter lettuce, chopped

1 ripe pear, choose your favorite kind, peeled and thinly sliced

2 Tablespoons dried cranberries

2 Tablespoons walnuts, coarsely chopped

3 Tablespoons Dark Cherry Balsamico Vinegar

3 Tablespoons Olive Oil with Organic Meyer Lemons

Gorgonzola cheese

Place a mound of clean butter lettuce on each plate. Place 1/2 of the pear slices on each place…arranging them nicely around the lettuce leaves.  Sprinkle the dried cranberries and walnuts over the top.  In a separate cup, mix together the cherry vinegar and olive oil, then spoon half onto each salad….sprinkle the tops of each salad with bits of the Gorgonzola cheese. YUMMY!
