With the start of every New Year, we all try and cut back a little on the calories and get in better shape. Here is a “lite” version of the delicious squash casserole that many Southerners have grown to LOVE! Is it as good as the one your Grandma made? No, NOTHING is THAT good…but it is still very tasty and will get you through those tough dieting days. Give it a try. It only takes a few minutes!

“LITE” SQUASH CASSEROLE

2 cups yellow squash, chopped
1/2 cup tomatoes, chopped
1/2 cup green onions, chopped
4 eggs, beaten
1/2 cup 2% cheddar cheese, grated
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 350 degrees. In a large pan, boil the squash and onions until they are tender…drain and mash slightly. Add the tomatoes and beaten eggs. Stir in the cheese and spices and mix well. Pour into a greased baking dish and bake at 350 degrees for about 30 minutes or until the mixture is set. (Serves 4)
