When you are trying to cut back on calories, but you REALLY need a little, tiny bite of something sweet, THESE are the perfect thing. They satisfy your craving and the recipe is small enough that it only makes a small amount so hopefully to rest of the family will gobble them up and there won’t even be leftovers to temp you later! This is NO SUBSTITUTE for the super-rich NY cheesecakes that you know and love, but….it’s a mighty good treat!

LITE BITE CHEESECAKES

8 ounces low fat cream cheese, softened
1/2 teaspoon vanilla
Mini Vanilla Wafers (about 18-20)
1/2 cup SPLENDA
1 egg, beaten

Mix the cream cheese and SPLENDA together. Add your vanilla and egg and whip until smooth. In a mini muffin tin, place a mini Vanilla Wafers in each tin (round side down). Spoon the cream cheese mixture into each cup until full. Bake in a preheated 350 degree oven for 20 minutes. Slide a sharp knife around the edges of each one to remove and place on a rack to cool. Top each one with a tiny piece of fruit, or serve just plain if you wish. Refrigerate any leftovers in a covered container.
