For my New Year’s cocktail tonight, I wanted to choose something bright and cheerful… and with it, I am wishing you the happiest and brightest of days in the coming NEW YEAR!

“Lemon Meringue Martini”

3 ounces Vanilla Vodka
1 ounce Cognac
1 1/2 ounces fresh Lemon Juice
1 ounce Simple Syrup

Mix everything together in a shaker filled with ice and SHAKE SHAKE SHAKE, then strain into your martini glass. Top with a little meringue and serve with a few meringues on the side.

For the Meringue Garnish (fun to eat by themselves too!)

1/4 cup granulated sugar
1/4 cup powdered sugar
3 large egg whites (NO YOLKS…any yolk in the white will ruin it)
1 teaspoon fresh lemon juice
1 Tablespoon lemon zest
.
To make the meringues, preheat the oven to 250 degrees.
Place the egg whites in a metal bowl and whip with electric mixer for 2 minutes. Add the lemon juice and the lemon zest. Slowly add the granulated sugar, then the powdered sugar. Whip everything until stiff peaks form. Place this meringue mixture into a piping bag with a large tip and pipe into little mounds onto a parchment lined baking sheet. I like to use a Silpat mat. Sprinkle a little extra granulated sugar over the top of each meringue. Space about 1-inch apart and bake for about 30-40 minutes, then turn off oven but leave meringues in the oven for another hour or until they are very dry…even overnight. Carefully remove them when cooled and store in a tupperware container for up to 3 days.
