When you need something quick for your Holiday guests….here are two yummy pecan recipes that will be sure to please!
They are so quick to make and you can make them a few days ahead of time and keep them fresh in a metal tin until ready to use.

Millie’s Praline Pecans
3/4 cup sugar
1/4 cup water
1/4 teaspoon cinnamon
dash salt
zest from 1 lemon
2 1/2 cups pecan halves

Boil all of the ingredients (except the pecans) in a large saucepan until the mixture is thick and slightly stringy. Add the pecans and toss them around the pan until they are all well-coated and all of the moisture has evaporated and you can actually see the sugar forming on the pecans. Toss everything out onto parchment paper and separate the sugar pecans with a large spoon. DO NOT TOUCH THEM with your fingers…THEY ARE VERY HOT. Let them cool completely…eat a few of them…eat a few more…then put them into a metal tin until you need them for your guests….or eat them now!

Millie’s Roasted Pecans
1 pound pecan halves
2 Tablespoons butter
salt

Spread the pecan halves onto a slightly greased baking sheet and dot with very thinly sliced pats of the butter. Sprinkle with salt. Bake at 350 degrees for 15 minutes…stir everything around and make sure all of the pecans get a coating of the butter…maybe add a little more salt…then put bake into the 350 degree oven and bake for another 15 minutes. Remove and toss everything onto parchment paper to cool…then eat them. You will need to MAKE YOURSELF STOP in order to have some left to save for the guests. Store them in a metal tin until you need them for your arriving guests. Try not to keep nibbling away at them…or you won’t have any left. LOL
