Mummy had some boiled chicken left over in the freezer from some homemade chicken broth that she made a few weeks ago, and she needed to make something with it; and what better thing to make than CHICKEN SALAD?  There is a really good recipe in our cookbook on page 82 if you have it… but this is a slightly different variety of chicken salad.  This one is made with added FRUITS!  If you have never tasted chicken salad with grapes and mandarin oranges you should give this one a try because it is super yummy with a little touch of sweetness.  There are several ways that you can serve this:  You can put it on sandwich bread, croissant rolls or place a scoop onto lettuce leaves if you are trying to cut back on your starch intake… however you try it, I think you will like this version.  Let us know your thoughts if you try it out.  We really do love hearing back from you.

FRUITY CHICKEN SALAD

2 cups diced cooked chicken (you can cook the chicken however you wish)

1 cup diced celery

1 cup seedless grapes, sliced into quarters

1/2 cup chopped TOASTED almonds (toast them at 350 degrees for about 5 minutes until lightly browned)

1 (11-ounce) can mandarin oranges, DRAINED

1/2 cup mayonnaise (I used a LIGHT variety)

2 TABLESPOONS finely chopped sweet onion

1/2 teaspoon salt

1/2 teaspoon coarsely ground black pepper

Lettuce leaves (optional if you choose to serve the salad without bread)

In a large mixing bowl combine your diced chicken, celery, grapes, almonds, and mandarin oranges.  Add the mayonnaise, chopped onion, salt and pepper.  Stir everything up until well combined. Place in refrigerator and chill for several hours.  Serve on your choice of bread or on lettuce leaves.  This will make about 4 cups so there is plenty for a family of 4-6 depending on how much they eat!

Millie and Mummy this chicken salad sounds YUMMM! I love pickles and I the one in the cookbook because it has dill pickle relish in it.
I’ve made chicken salad with grapes and added dried cranberries. Hubby isn’t it keen on it he likes celery though. ??

Thank you for this great recipe. I am vegetarian, Do you have any vegetarian recipes? I stopped eating eating meat a few years ago but I still cook for my non vegetarian husband . I made your yummy hamburger and mashed potato recipe last week for him. He was impressed.
Thank you from Hollywood the rescue Yorkie (he came from LA with the name.) and Cynthia, the mom, who does the cooking. 2 separate meals each dinner, veggie and meat.

This sounds yummy! I use dried cranberries and sunflower seeds(instead of nuts) in mine. While I do use salt and pepper, I also add some herbs de province. I also “stuff “an avacado half with mine! ?❤
