This is quick and easy…when you need something “quick and easy” for breakfast!  Just remember to cook it SLOW and LOW so that your pizza dough gets cooked through.  You’ll be enjoying these yummy little roll-ups in MINUTES!!!!

Fruit Roll-Ups

1 can (11 oz) pizza crust thin crust (I used Pillsbury)

1 cup strawberries, quartered

1 cup blueberries

1/3 cup sugar

1 egg

1/4 cup milk

powdered sugar for garnish

whipped cream for garnish if desired

In a small bowl, mix together your strawberries, blueberries and sugar.

In another bowl, whip together your egg and milk.

Unroll the pizza dough and flatten out…roll it out a little so that you have a nice big square.  Cut the square into 12 even pieces.  In the center of each piece add a spoonful of the berry and sugar mixture.  Roll up and pinch the seam together….pinch the ends shut too.  Roll this in your egg and mixture and place in a large frying pan sprayed with non-stick cooking spray.  Repeat with all of the squares of dough.  Don’t overcrowd your pan.  Cook on LOW to MEDIUM-LOW heat and with a pair of TONGS…turn the roll-ups onto ALL SIDES to get them browned evenly.  Keep the heat LOW so that you make sure to get the pizza dough COOKED.  Remove from pan and onto a serving plate.  Sprinkle with powdered sugar and whipped cream if desired.  Serve with some scrambled eggs for a really super breakfast or just by themselves with a cup of coffee.  These are great warmed up for a little snack later in the day…or even COLD!  YUMMY!
