I have a GREAT recipe for homemade buttermilk biscuits in my cookbook (page 51 for those of you with the book) and there are lots of ways to serve of biscuits, but one of my favorites is with a serving of country gravy! It only takes a few minutes and this is REAL COMFORT FOOD! I’m going to use this gravy for dinner tonight too…so come back later and see what else you can do with the leftovers.

COUNTRY GRAVY WITH BISCUITS

1 Tablespoon bacon grease
3 Tablespoons butter
1/2 cup flour
1 1/2 cups evaporated milk
3 cups water
1/2 teaspoon salt
1/2 teaspoon cracked black pepper

In a large saucepan over medium-low heat, melt the bacon grease and butter…add the flour and stir until the mixture is a light brown color. You want to make a roux and cook out the raw taste of that flour. Slowly pour in the evaporated milk and water and keep mixing with a whisk at the same time. The mixture will appear lumpy while you are doing this…but keep mixing, it will smooth out. Remove from heat every now and then to whisk. Add the salt and pepper…add more to taste if desired. Serve over biscuits and then store leftovers in a covered container in the refrigerator. When you need to reheat, you might need to add a little more water to thin it back out.
