Carrot-Cake Cookies

Do you love carrot cake?  Now you can have it…in a COOKIE!  This is easy too…you can be eating them in just a few minutes!

CARROT-CAKE COOKIES

1 cup all purpose flour

1 1/2 teaspoons cinnamon

1 teaspoon baking powder

3/4 teaspoon salt

1 cup butter, softened

1 cup packed brown sugar

1 egg

1 teaspoon vanilla

2 3/4 cups old fashioned rolled oats

2 cups shredded carrots

1 cup chopped nuts (I used pecans)

In a small bowl combine the flour, cinnamon, baking powder and salt.  In a large mixing bowl combine the butter and sugar and beat with a mixer until it is light and fluffy.  Add the egg and vanilla.  Slowly mix in the dry ingredients from your small bowl until well combined.  Stir in the oatmeal, carrots and nuts.  Drop by rounded tablespoons onto a well greased baking sheet.  I like to use a Silpat sheet so nothing sticks!!!!  Bake in a preheated 350 degree oven for about 15-17 minutes….mine were done in 15 minutes but keep checking them until they are golden brown on top.  Cool on a wire rack and store in a covered container.  Makes 4-5 dozen.  These are super duper yummy and you can even give a little nibble to your furbaby!
