This little breakfast is quick to fix and your guests will think that you have your own professional  chef working away in your kitchen!  You can find the best Mexican Vanilla here in my new on-line boutique…it has the most AMAZING FLAVOR!!!!

 

1 pint fresh blackberries

3 Tablespoons white sugar

3 Tablespoons Chambord

2 teaspoons Mexican Vanilla

12 fresh mint leaves cut into tiny, thin strips

3 ruby-red grapefruits cut in half

1/2 cup raw sugar

 

In a small bowl, gently mix together the blackberries, white sugar, Chambord, vanilla and sliced mint leaves.  Let this sit for about 20 minutes in the refrigerator.

Preheat your broiler and place the grapefruit halves on a foil lined baking sheet.  Sprinkle each half with a little of the raw sugar and broil in the oven for about 5 minutes or until the sugar has melted and started to bubble.  Be careful not to burn the sugar…it happens in the BLINK OF AN EYE!

 

Remove from the oven and let cool slightly.  Top each grapefruit half with some of the blackberries and drizzle with a bit of the blackberry juices from the bowl.  Garnish with a few mint leaves if desired.

 

I will tell you that this was sooooo nice and refreshing with a nice cup of hot tea!  Perfection!!!
