When you need a little snack, I’ve got a most delicious one for you that is really pretty healthy! My friend Ms. Bonnie shared this with us and now, it’s the ONLY salsa we make anymore. You can serve it with store-bought tortilla chips, but we like to make our own for a healthier “baked” variety…either way, you are gonna LOVE THIS SALSA!

Black Bean Salsa

2 cups diced sweet onion
1 package (16 oz) frozen white and yellow corn, thawed and drained
1 can (15 oz) black beans, rinsed well and drained
1 Tablespoon red wine vinegar
3 Tablespoons fresh squeezed lime juice
1/4 cup fresh chopped cilantro
2 cups diced tomatoes
1 teaspoon salt
1/2 teaspoon coarse ground pepper

Mix all ingredients together in a large mixing bowl. You can serve this right away but it is even better once it has a chance to sit for several hours…or even overnight.

Homemade Tortilla Chips

1 package corn tortillas, 6 inch
cooking spray
sea salt (I sell a really nice sea salt in my on-line BOUTIQUE but you can use any nice coarse salt)

Cut the tortillas into 6 little pie wedges…you can stack up several and cut quite a few at a time. Lay them out on a baking sheet lined with parchment paper or a silpat mat (I sell these in my online BOUTIQUE and just LOVE IT!!!) Spray the corn tortilla wedges with the cooking spray and then generously sprinkle them with the sea salt. Bake in a 350 degree oven for 10-15 minutes or until they are a light golden brown color. Remove from pan and bake the next batches until all tortillas are done. Store them in a ziploc bag after they are completely cool.
