My Mummy got this yummy cookie bar recipe from her friend Melissa, who got it from HER friend Shelley, and I don’t know WHERE she got it…but you really, really need to try this! They don’t take long to make and in just a few minutes they will all be GONE! Take these to a party and watch them DISAPPEAR! Everyone will be asking YOU for the recipe too!
.
ALMOND COOKIES
.
1 box Nabisco Original Graham Crackers (I used the low-fat, just to save a FEW calories…hahahaha)
1 cup firmly packed brown sugar
1 pound, less 2 Tablespoons unsalted butter
8 ounces sliced almonds
.
Preheat the oven to 400 degrees. Line a large jelly-roll pan with heavy-duty foil. The foil should cover the edges for easier removal and cleaning. Line the pan with the graham crackers, breaking them if needed to fill the entire area. (The pan should hold almost 35 cracker squares if you are using the largest Baker’s Secret Jelly-Roll Pan) Cover the crackers with the sliced almonds.
In a medium saucepan, bring the butter and brown sugar to a rolling boil and gently boil for 4 minutes, stirring constantly! Pour this over the almonds and graham crackers and bake in the oven for 9-10 minutes…it will be a golden brown…be careful not to burn the bottom!!!!
Cool slightly and cut into squares, using the square of each graham cracker as your guide, then cut diagonally across each square. You can get 7 squares across and 5 squares down if you have 35 on your pan. Let them then cool until hardened and enjoy. Store any leftovers in a plastic ziploc bag. CAUTION: These are ADDICTIVE!
